We harvest all the potatoes used to produce "Artesanas de
Añavieja" by hand, taking care not to damage them. We
put them in bags and boxes to carry them to our own stores, where
they will be in optimal conditions of temperature and humidity,
controlled by thermostats, to get the 100% when they are fried.
In the factory, following the process, we peel and check them by
hand, selecting them and refusing the ones, which don't pass the
control because of their size or the unripe.
We fry them in a frying pan with Olive Oil and with Pure Olive
Oil (first press when cold) from ecological agriculture, when we
fry ecological potatoes.
Once fried, and before packing, potatoes go through a continuous
belt, where there is taken the last selection, taking away the burned,
crashed and soft ones, or the potatoes with impurities.
Why Ecological?
In Artesanas de Añavieja we have 40 ha. registered as ecological
agriculture since several years ago, we already have the guarantee
of being ecological. We have our factory registered at Castilla
y Leon's Ecological Agriculture Council, and at this moment we fry
ecological potatoes once a week.
The ecological farm is sited in Añavieja, where we have
first quality lands to grow potatoes and corn.
We also have a compost factory, where we prepare the organic matter
we use to fertilize our lands as ecological fertilizer.
The water, we use to irrigate, is born few meters from our property,
and we are the first using it, to guarantee that it is unpolluted.
Weeds are controlled putting a cultivator through the furrows
to eliminate them. Then we review them by hand.
As regards parasites, plant louses and other plagues, there isn't
any because of the height, since the farm is over 1000 meters height
above sea level.
The bags we use are made of white polypropylene, the most ecological
material existing nowadays talking about packing, and the boxes
are made of recycled cardboard.
